Formula and method
For a target of 2 g salt per 100 mL starting water, one liter of water needs 20 g salt.
Percent (g per 100 mL water) = 100 × salt_g/water_mL.

Assumptions and limitations
- The percentage is grams salt per 100 mL of starting water, not salt mass divided by total solution mass or final solution volume.
- Preset values are arithmetic concentration choices. They are not food-specific recommendations or a validated preservation process. Use a tested recipe for fermentation or canning.
- Starting water volume must be positive and salt mass nonnegative. Dissolving salt changes final volume; that change is outside this model.
- Use weighed salt; crystal sizes make spoon-based quantities inconsistent. Recipe safety also depends on acidity, temperature, ingredients and process.
Common questions
Is 2 percent the final solution mass fraction?
No. Here it means 2 g salt per 100 mL of starting water.
Can this establish safe preservation?
No. Use an authoritative tested recipe and its complete process.
